Triple Chocolate cookies ♡

Its a rainy Sunday and i didn't have any plans so decided to make these:) If you've ever been to Bath in Devon and had 'Bens Cookies' these taste really similar! If you love a chocolate overload then these are for you! they taste soo good and uses a few pretty basic ingredients..















what you'll need:
140g dark chocolate (70% cocoa solids)
65g unsalted butter
2 large eggs, at room temperature
half teaspoon vanilla extract
pinch of salt
130g caster sugar
185g plain flour
1 tsp baking powder
50g milk chocolate
100g good-quality white chocolate
edible glitter to finish
2 baking sheets, lined with baking paper



1. Melt the dark chocolate with the butter. Do this by putting in a heatproof bowl on top of a saucepan of water but don't let the base of the bowl touch the water (steaming not boiling). Remove the bowl from the pan and leave to cool for about 5 minutes.

2. Next, put the eggs, vanilla, salt and sugar in a large mixing bowl, I then used a hand electric mixer and mixed together for a couple minutes until thoroughly combined. Stir in the chocolate mixture.

3. Sift the flour and baking powder into the bowl and stir in using a wooden spoon. Roughly chop or break up the white and milk chocolate into small chunks and mix in. Leave the mixture to stand for 15 minutes to firm up a bit. Preheat the oven to 160degrees C/gas 3. 


4. Take a heaped tablespoon of mixture for each cookie, drop onto the lined baking sheets, spacing the mixture well apart but don't flatten them.



 









5. Bake for 15 minutes until just set. The cookies will continue to cook for a few minutes after they come out of the oven. Leave on the sheets for about 5 minutes, then transfer to a wire rack and allow to cool completely. If you want extra sparkle dust lightly with some edible glitter.




 Then all you have to do is enjoy! I had mine with a cuppa tea whilst still warm and it was delicious!
